Fattorie Girau’s aged cheeses are produced from pasteurised goat and sheep’s milk from the best farms of Sardinia. Taste them to savour in a flash the sun and sea of this beautiful island and enrich your recipes with goodness and creativity.

Aged cheeses are produced with full-fat milk and are the result of a long ageing process – called curing – which may even last several years, according to the type of cheese one wishes to make.
During this period, cheese undergoes chemical transformations that modify the taste and texture of the cheese and rind, resulting in that characteristic intense taste.
Cheeses may be classified based on the duration of curing. Medium curing lasts between two and six months; long curing requires cheese to age up to one year.
Finally, extra-hard cheeses are cured longer than 12 months at the dairy, while smoked cheeses undergo a smoking process while being cured.
